Zoe1 ( SC ) Cake Recipe
Here's a basic cake batter that produces a very nice basic cake - you can add your own flavourings and dry fruit.
3 eggs weighed in shell then separated weight of 3 eggs in: Self Raising flour Sugar (castor sugar is best) Butter 1 x sherry glass of liquid (I use Whiskey in which the peel of a lemon has been soaked overnight but you could use buttermilk with a few drops of vanilla or orange juice, brandy, sherry or a liqueur) 3/4 - 1cup dried fruit - eg sultanas, currants, dried ginger, coconut. pinch of salt
Method: Set oven to 185C Grease and line a deep round cake tin. Beat egg whites to soft peaks stage and set aside. Soften butter (do not melt) and beat to a cream with sugar Add 1tbsp of the weighed flour and then egg yolks one at a time beating after each addition. Stir in dried fruit and liquid. Dont overstir. Fold in beaten egg whites and sifted flour alternately in 1/3 batches of each. Batter should be a stiff but moist consistency. Transfer batter to baking tin and bake for 50-60mins
Easy-peasy, travels well, no icing or fillings needed. My favourite version is sultanas and lemon flavoured whiskey. But you can mix and match with the fruit and liquid flavourings. Orange juice concentrate and chopped dates is nice too.

Frosted Windows
Want to make your windows "frosted" for more privacy?
Add 1 tablespoon of Epsom Salt to 1 cup beer. Brush on the window! Let dry..To remove the frost, wash off with ammonia! Just remember to cover any wood or furniture nearby, because this drips!
