If you have mini easter eggs, caramel or mint or chocolate.. or cut up moro bars.. heres an easy recipe for surprise muffins
2 c self raising flour 3/4 c brown sugar 1/4 c cocoa
Into a big bowl & mix together
In a jug melt 125gm butter then add 3 eggs 1 c milk & whisk together
Fold egg mix into the flour til just mixed Into muffin tin or patty tins, Half fill with mixture. Put the egg, choc or cut up moro bars, top with the remaining misture.
Bake 180 Celsius approx 15 mins

I'm gonna try this later...will let you know how they turn out...I'm not good with muffins etc...they turn out as door stoppers....

Tried and tested and very very nice. I surprised myself as my muffins are usually good paper weights and door stoppers.

The small cadbury cream eggs with the caramel. Very nice indeed.

Caro I did make these a few days ago...and they must have been good because they were'nt around long enough to turn into door stoppers...lol...and I put cut up chunks of marshmellow easter eggs in the centre...yummy....the cat even liked them, the cheeky little thing got into the leftover one on the counter and had a good feed...norty girl, yes she got a big telling off...
