Looks like a bbq dinner here now on Xmas day as we do have to milk...I make a mean lettuce salad and a great potato salad, just looking for ideas for other salads for Xmas night...seafood ones I would love but also pasta salads, PLEASE people

There's a couple salads on first page of my Recipe Rose. & when I get home later in week & have a min or two I'll find some for you. I made a well they thought was nice on Sat night a curried rice salad & it was required me to make another last night..

Bean and Corn Salad Ingredients 1 cup black or red beans, canned or dry, soaked and cooked 1 cup frozen sweet corn chopped onion chopped bell peppers chopped celery ground cumin rice vinegar Directions:
Mix the veggies, add cumin and rice vinegar to taste. or good vinegar dressing.
& maybe 1cup cooked pasta could be nice in it, more dressing would be required. little extra french one.

Mix in bowl 1tbsp oil. 1tbsp vinegar. 1 to 1& 1/2 tsps curry powder.1 tsp soya sauce (opt) Cook 1 & 1/2 cups rice in boiling water till just cooked, drain & add to bowl while still hot, mix well to coat rice. Add about 1/2 cup chopped celery, cup cooked peas,& if wished diced cooked carrot, & corn. 1/2 cup choped onion, red, spring etc. last time i made this, I used a french type dressing, Though the recipe we used yrs ago said cup of mayo . Add a good shake of poppy seeds if wished.

Seafood Salad
2 cups cooked pasta shapes, coloured ones are &look nice. up 2 cups surimi 1/2 to 1 cup shrimps. 1 cup mixed veg.. ie: chuck wagon corn mixed would go well.Combine all in bowl & add seafood dressing, if this is bit strong, add some mayo. Quite bit dressing is needed as you don't want dry salad.. or instead of surimi add a tin of salmon , or this can be added too. Enjoy!!

Macaroni Salad
Ingredients:
1 pound cups uncooked elbow macaroni 6 hard-cooked eggs, chopped 3 stalks celery, chopped 1 green or red bell pepper, chopped 4 cups real mayonnaise 3 tablespoons prepared yellow mustard 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon onion powder
Procedure:
1. Bring a pot of lightly salted water to a boil. Add macaroni, and cook for 8 to 10 minutes, until tender. Drain, and set aside to cool.
2. In a large bowl, stir together the eggs, celery, and pepper.
3. In a small bowl, stir together the mayonnaise, mustard, pepper, salt and onion powder.
4. Combine in the bowl with the eggs and vegetables, and stir in macaroni until well blended.
5. Cover and chill for at least 1 hour before serving.

Mushroom And Salami Pasta Salad
Ingredients:
150 grams mushrooms 150 grams salami, diced 1/4 cup Eta Lite and Free Pepper Dressing and Marinade 4 cups cooked pasta spirals 200 grams cherry tomatoes, halved 2 cups (2-3 bunches) baby spinach leaves, torn 1/4 cup each finely sliced mint and parsley 1/4 cup sliced black olives 200 grams feta cheese, crumbled (optional)
Procedure:
1. Quarter the mushroom and place in a bowl with the salami and Eta Lite and Free Pepper Dressing and Marinade and leave to marinate to 15 minutes.
2. Add the pasta, cherry tomatoes, spinach, herbs and olives and toss well. Add the feta if using.
3. Season the salad if wished and serve soon after making.

Noodle Salad
Ingredients:
100g thin egg noodles 1 each red, green & yellow pepper, deseeded & sliced 5 spring onions, finely sliced 1 bunch coriander, chopped
For the dressing 2 - 3 cloves garlic, crushed (1 teaspoon) 1 tablespoon fish sauce 1 teaspoon minced fresh ginger 1 tablespoon sesame oil 2 tablespoons sweet chilli sauce 1 tablespoon tomato or BBQ sauce 2 tablespoons Chelsea Soft Brown Sugar 1/4 cup light olive oil 1/4 cup golden soy sauce
Procedure:
Boil the noodles until just soft. Drain and place in a large bowl. Add the peppers, spring onion and chopped coriander.
Mix the dressing ingredients in a blender or screw top jar and pour over noodles. Toss to mix well then chill before serving.
