Sweet Potato and Carrot Soup Prep Time: 35 Minutes Ready In: 1 Hour 5 Minutes Cook Time: 30 Minutes Servings: 4 "This is a beautiful, thick soup with bright orange colour and a hint of exotic spice. Perfect for autumn!"
Ingredients: 2 tablespoons butter 1 onion, diced 1/2 teaspoon ground cardamom 1/4 teaspoon ground turmeric 1/4 teaspoon ground ginger 1/4 teaspoon red pepper flakes 1/4 teaspoon ground cinnamon 1 pinch cayenne pepper 1 (14 ounce) can chicken broth 2 cups water 2 large sweet potatoes, peeled and diced 3 carrots, peeled and chopped Salt and pepper to taste Directions: 1. Melt the butter in a large saucepan over medium-high heat. Stir in onions, and cook until golden brown, 5 to 7 minutes. Season with cardamom, turmeric, ginger, pepper flakes, cinnamon, cayenne; cook until fragrant, about 1 minute 2. Pour in chicken broth and water; add sweet potatoes and carrots. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until the vegetables are tender, 25 to 30 minutes. Remove from heat, and puree in batches until smooth.

Spiced apple cake This moist cake keeps and travels well. Invariably it comes out slightly differently each time – a tribute to nature and the difference between one apple and another. You can also cook the mixture as muffins. Both cake and muffins freeze well. 125g butter 1 cup cooked apples (about 2-3 apples) or 1 x 225g can apples 1 cup sugar 1 egg 1 1/4 cups flour 1 teaspoon cinnamon 1/2 teaspoon each nutmeg, allspice and salt 1 teaspoon baking soda 1/2 cup sultanas icing sugar Preheat oven to 160 C. Melt butter in a medium-large saucepan. Remove from heat and mix in apples and sugar. Stir to combine then stir in egg. Sift dry ingredients and add along with sultanas to the apple mix. Stir just enough to blend ingredients evenly. Spread the mixture into a lined greased 20cm cake tin and bake for 45 minutes. Sprinkle with icing sugar when cool. Serves 6-8 To make as muffins, divide mixture among 12 large greased muffin tins (allow 1/2 cup per muffin). Bake until risen and set, about 35 minutes. Stand for 5 minutes before turning out.

Sounds bit like my muffin recipe . but i use 1 grated apple.
