Just be careful what you buy. If it's a tin one you will have to be careful how you use it as it rusts very quickly from believe or not the smoke. I brought a copper one,not bad but I then brought a stainless steel one..Very good. I got it from the warehouse,cost about $70 I think.
Just a hint on smoking fish..You don't have to scale the fish, but do open the fish right out. I find it's best to leave the fish to dry out over night, laying it on a old t/towle or news paper. Just before smoking put brown sugar all over fish flesh and rub it in a bit..NO salt or pepper.
Don't put your saw dust straight on the bottom of the smoker, put a sheet of silver paper down and saw dust on top of that. You will find clean up is much easier. Another don't..Don't lift the lid of the smoker off when you are smoking the fish, remember the smoker is also cooking the fish, you lift the lid you have stuffed the cooking.
I have done a lot of fish smoking believe me, need any hints I will be around, might come and feed..ok!!
