It's that time again.
.actually it's a bit late in the year to be
starting on Xmas Cakes and Puddings.
.For those who haven't started yet..
here's my Xmas Cake recipe..
My Xmas Cake
6 Eggs.. 1 Breakfast cup Brown Sugar..
lb. butter.. 1 breakfast cup Flour..
3lb. mixed Fruit..1 small tin crushed Pineapple
1 tsp. baking soda.. pinch of Salt..
cup Brandy ( optional )
1 tsp. each of..ground Nutmeg..Cinnamon and
Mixed Spice..
Cream butter and sugar..add eggs and pineapple.
Dredge fruit with a little flour
and add all ingredients together.
Grease and line cake tin..and cook in slow oven..
about 130 150oC ..for about 3 and hours..
and then another hour longer with oven off.
( this recipe has been handed down the family.. and used for every main occasion ! It was my 21st. Cake.. doubled..and my Wedding Cake..tripled ! It was my kids 21st. cake too.. and a definately once a year Xmas cake )
Quik 'n' Easy Xmas Pudding
1 Banana.. 2 cups soft Breadcrumbs..
2 cups Mixed Fruit..2 level tsp. Mixed Spice..
1 cup Milk.. 1 level tsp. Baking Soda..
1 squeeze of Lemon Juice..
Grease basin lightly. Mash banana and put in bowl
with mixed fruit, spices and bread-crumbs.
Mix together. Dissolve B. soda in the milk.
Add lemon juice and milk mixture to rest of ingreds.
Stir well until thoroughly mixed. Place in greased
basin and cover. Half fill saucepan with water. When
boiling, add basin. Put lid on saucepan and steam
about 1 and1/2 2 hours.
* Check every now and then to make sure
there is still water in the pot !
Why is Plum Pudding Called Plum Pudding
I'm sure you all have lots of recipes
for the Season..and this is the place to
share them with us..
Christmas Cake Recipe
1 cup water
1 cup sugar
4 large eggs
2 cups dried fruit
1 teaspoon baking soda
1 teaspoon salt
1 cup brown sugar
lemon juice
nuts
1 gallon whiskey
Sample the whiskey to check for quality.
Take a large bowl.
Check the whiskey again to be sure it is of the highest quality.
Pour one level cup and drink.
Repeat.
Turn on the electric mixer; beat 1 cup butter in a large, fluffy bowl.
Add 1 teaspoon sugar and beat again.
Make sure the whiskey is still OK. Cry another tup. Turn off mixer.
Break 2 legs and add to the bowl and chuck in the cup of dried fruit.
Mix on the turner.
If the fried druit gets stuck in the beaterers, pry it loose with a drewscriver.
Sample the whiskey to check for tonsisticity.
Next, sift 2 cups of salt. Or something. Who cares?
Check the whiskey.
Now sift the lemon juice and strain your nuts.
Add one table. Spoon. Of sugar or something. Whatever you can find.
Grease the oven.
Turn the cake tin to 350 degrees.
Don't forget to beat off the turner.
Throw the bowl out of the window.
Check the whiskey again.
Go to bed.

Every year i make a xmas wreath out of lollies ...fruit bursts or minties work well and i use a little cotton to sew them on a coathanger ... Report this post

26/10/2003 7:20:12 AM wife has a recipe for a sponge that cant be written down as it never turns out unless you actually watch the process.
she learnt it off a friend and the first time she tried it the sponge rose so high that it hit the top element in the oven.
one of the secrets is to toss the hot pan , when cooked, on the floor. and it works if the edge of the baking pan hits first and not so good if it lands flat on its base.
might aske her to do it one day and record every thing as they some times rise 5 inches high Report this post

1 tsp. coffee in 1 cup boiling water..
1 pkt. Marshmallows
500ml. cream
Divide marshmallows in coffee water. Leave to partly set.
Whip cream and fold into marshmallow mixture.
* it doesn't matter if marshmallows have not all melted.
CAPPUCCINO CREAM CHEESE MOUSSE
250g. cream cheese, softened.. 3 med. size egg yolks..
cup castor sugar.. 300ml. cream..
1 Tbsp. coffee and chicory essence.. whipped cream..
grated chocolate to garnish.
Whip cream until very thick and chill. Beat cream cheese,
egg yolks and castor sugar together and add essence.
Fold together and pour into small sweet glasses and
garnish with the whipped cream and chocolate or
chopped nuts.
CHOCOLATE MOUSSE
cup Milk.. 1 Tbsp. Gelatine.. 2 Tbsp. Cocoa..
tsp. Vanilla Esssence.. cup Sugar..
tsp. Coffee Essence or coffee..
1 tin Evaporated Milk, chilled.
Put everything except evaporated milk in saucepan
and bring to boil. Boil constantly for 4 minutes then cool.
Beat evaporated milk until thick, then add chocolate
mixture and leave to set.
Serve with cream and / or walnuts, or icecream.
BLACK FOREST TRIFLE
Chocolate swiss roll or sponge.. 2 dstp. Cocoa..
1 tin pitted Black Cherries or Boysenberries..
1 pkt. Boysenberry Jelly.. 600ml. Custard..
300ml. Cream, whipped.. 1 Chocolate Flake.
Place sponge in base of a trifle bowl, pour on fruit,
then jelly, and leave to set. Make custard, adding in cocoa,
and cool.
Pour chocolate custard onto jelly,
then add whipped cream.
Decorate with a crumbled Flake bar.
MUM'S TRIFLE
Sponge.. Sunflower Seeds.. Litre Custard..
Coconut.. jar Raspberry Jam.. Brandy Essence..
1 cup Ginger Ale.. cup Whipped Cream..
Chocolate Hail..
Beak up sponge and arrange in a large bowl.
Spoon jam over, then sprinkle sunflower seeds
and coconut over.
Mix essence and ginger ale and pour over sponge.
Make custard and pour over while still warm.
Cool, then add whipped cream.
Decorate with chocolate hail.
Leaving overnight will improve it.

500g. Blanched Peanuts.. 1 Egg, separated.. 2 Tbsp. Water..
1 tsp. Cinnamon.. cup Sugar.. tsp. Ground Cloves..
tsp. Nutmeg.. 1 tsp salt.. - 1 tsp. Ground Ginger..
Beat egg yolk and water. Whisk white until stiff.
Combine and add sugar, nuts and spices.
Coat thoroughly and spread thinly in oven dishes.
Bake in slow oven at 150oC for 1-2 hours stirring
frequently until mixture is dry.
Christmas Slice
**************
250g. packet of biscuits.. 1 cup Mixed Fruit.. 2 Tbsp. Cocoa..
cup Castor Sugar.. 1 Egg, beaten.. 100g. Butter, melted..
2 Tbsp. Sherry or Pineapple Juice..
Crush biscuits. Mix biscuits, fruit, cocoa and sugar.
Add beaten egg, butter and sherry/pineapple juice.
Pres into well-greased swiss roll tin. Refrigerate until set.
Cut into small squares to serve.
Quick Cooking Pavlova
3 Egg Whites.. 4 Tbsp. Boiling Water.. 1 cups Castor Sugar..
1 tsp. Vinegar.. 1 dstsp. Cornflour.. 1 tsp. Vanilla Essence..
Put all ingredients into a bowl and beat well until stiff.
Place on tinfoil sprinkled with Sugar or into an ovenproof serving dish. Cook at 150oC for 35 mins. Cool and decorate.
Coffee Pavlova
3 Egg Whites.. 1 cups Sugar.. 1 tsp. Instant Coffee ( not granules )
2 Tbsp. Boiling Water..
Pre-heat oven to 200oC. Put ingredients in beater bowl in this order :
Egg whites..sugar..coffee..then water. Turn beater on immediately and beat until thick, stiff and creamy.
Now turn oven off for 5 minutes before putting pavlova in oven.
Meanwhile.. place pavlova mixture on a piece of lunch paper which has ben greased and run under a cold tap. Shake and put on oven tray. Leave in turned off oven for 1 hour. When cooked, turn upside down on plate and fill with whipped cream, then top with fruit of choice.

29/11/2003 2:13:20 PM In our house we like to have muffins for breakfast on Christmas morning. Here are a couple of our favourites..
Kumera, Bacon and onion Muffins
*************************************
2 Tbsp. Oil.. 2 rashers lean, chopped Bacon.. 1 small onion..
2 cups Self-Raising flour.. 1 cup grated Tasty Cheese..
1 tsp. Mild Curry Powder.. tsp of salt..
1 cup of Milk.. 1 large Egg..
1 cup ( 200g ) roughly mashed Kumera ( golden is best )
Heat the oil in a med. frypan. Cook the chppd. Bacon and
diced onion in the oil until the bacon begins to brown.
Meanwhile.. measure the flour, grated cheese, curry powder and salt into a large bowl. Toss well with a fork to mix.
In another bowl.. mix the milk and egg with the fork until blended, then stir in the roughly mashed
Kumera, and mix again, leaving some chunky pieces.
Tip the cooked bacon and onion, then the kumera mixture
into the flour. Gently fold everything together
until the flour is moistened. * Do not over-mix !
Spoon the mixture into 12 lightly greased med sized muffin pans..or 24 small ones. Bake at 200oC for 12 to 15 minutes,
or until golden brown on top and firm when pressed in the centre.
** These are so yummy that they disappear fast !!
I usually need to make 2 batches..lol.
Orange & Lemon Muffins
*************************
2 cups plain Flour.. 4 tsp. Baking Powder.. tsp. Salt..
cup Sugar.. 100g Butter.. 1 large Egg..
cup Milk.. 1 Orange, grated rind and juice.. 1 Lemon, grated rind and juice..
cup Sugar for glaze.
Measure the first 4 ingreds. Into a bowl and toss lightly to mix thoroughly.
Melt the butter until just liquid. Add the egg and milk and mix with a fork until well combined.
Grate all the coloured rind from the orange and add enough water to make it up to a cup.
( Do not squeeze the lemon until later )
Combine all 3 mixtures and fold together carefully
until the flour is dampened. Spoon mixture into 12 greased medium muffin pans.
Bake at 200oC for about 12 minutes.
Stir the juice from the lemon with the sugar for glazing.
Brush this over all the surfaces of the hot cooked muffins
using a pastry brush, then cool on a rack.
VARIATION : half fill muffin pans with mixture,
place a spoonful of Cream Cheese on the centre of each,
Then top with the rest of mixture.
Delicious !!

king size bar of chocolate (solid like dairy or dream)
pint (small bottle) cream
liquer if desired
melt chocolate in a bowl over boiling water...double boiler i think it's called. when chocolate is all melted, add cream. the more cream you add the softer the dip, good for soft fruits, the less cream you add the firmer the dip, good for dried fruits etc.
add the liquer if using it, about 1 - 2 tbsp is enuff...
pour into serving bowl...and refridgerate. bring it out about 15-20 mins before serving.
i like to put mine in the middle of a platter of dried fruits and nuts.
it is yummy and addictive and intoxicating if u add too much p*ss Report this post

Brush this over all the surfaces of the hot cooked muffins
using a pastry brush, then cool on a rack.
VARIATION : half fill muffin pans with mixture,
place a spoonful of Cream Cheese on the centre of each,
Then top with the rest of mixture.
Delicious !!

king size bar of chocolate (solid like dairy or dream)
pint (small bottle) cream
liquer if desired
melt chocolate in a bowl over boiling water...double boiler i think it's called. when chocolate is all melted, add cream. the more cream you add the softer the dip, good for soft fruits, the less cream you add the firmer the dip, good for dried fruits etc.
add the liquer if using it, about 1 - 2 tbsp is enuff...
pour into serving bowl...and refridgerate. bring it out about 15-20 mins before serving.
i like to put mine in the middle of a platter of dried fruits and nuts.
it is yummy and addictive and intoxicating if u add too much p*ss Report this post
