Apricot, Ginger and Pistachio Balls
Ingredients
200 g long-thread desiccated coconut 300 g dried apricots, cut in half 50 g crystallised ginger 150 g condensed milk 100 g pistachios, roughly chopped
Preparation
Pre-heat oven to 160°C. Place coconut in a baking dish and toast in oven until golden, stirring several times – about 8–10 minutes depending on the thickness of your coconut. Cool. Pulse-blitz apricots and ginger in a food processor till you get smallish pieces. Add condensed milk and briefly blitz – don’t overwork it. Tip onto your bench and flatten out to ½ cm thick. Sprinkle pistachios over, then gently knead together until combined. Dampen your hands in cold water, then roll the paste into balls and toss in the coconut, pressing it on to coat it. Keep in the fridge, covered tightly, for up to 2 weeks.

Chocolate Cake (No Eggs and No Butter)
This cake can be mixed in the container it is going to be baked in (e.g deep round cake tin). There is no need to grease the tin.
3 cups flour 2 cups sugar 1 tsp salt 2 tsp baking soda 2/3 cup cocoa (less can be used) 1 tsp vanilla essence 2 Tbsp vinegar 2/3 cup cooking oil 2 cups water
1. Mix dry ingredients thoroughly. 2. Add liquids and mix well. 3. Bake at 180C for 1 1/4 hours.
The cake can be iced or left plain. It also makes a good dessert served with cream or custard.

Sticky lemon slice is a recipe that pops up everywhere, this version, to the best of our knowledge is quite generic and has been shared around many community cookbooks.
Ingredients
225g butter,softened 1/2 cup icing sugar 2 cups plain flour 3/4 cup sugar 2 Henergy Cage Free eggs 2 tablespoons plain flour 1 teaspoon baking powder finely grated zest of 2 lemons 1/3 cup lemon juice icing sugar for dusting
Method
Preheat oven to 170 C.
Beat the butter and sugar until pale and creamy, either with a cake mixer or in the food processor. Mix in the 2 cups of flour.
Press dough into a 20x 30 cm slice pan. Bake for 15 minutes then remove from the oven.
While the base is cooling, make the topping.
Beat the sugar and eggs together until pale and creamy, add the 2 tablespoons of flour, baking powder, lemon rind and lemon juice. Mix together.
Pour the mixture on top of the base, then return it to the oven and bake for a further 30-35minutes, or until golden in colour and firmish to the touch.
Cool in the tin, then dust with icing sugar and cut into squares. Transfer to an airtight container when cool.

Chocolate-Coconut Layer Bars Recipe
Ingredients
3/4 cup butter, cubed 3 cups Oreo cookie crumbs 2 cups sweetened shredded coconut 1/2 cup cream of coconut FILLING: 1/3 cup butter, softened 3 tablespoons cream of coconut 1/4 teaspoon coconut extract 3 cups confectioners' sugar 1 to 2 tablespoons 2% milk TOPPING: 1-1/2 cups semisweet chocolate chips 4 teaspoons canola oil 3 Mounds candy bars (1-3/4 ounces each), coarsely chopped, optional
Directions
Microwave butter on high until melted; stir until smooth. Stir in cookie crumbs, coconut and cream of coconut until blended (mixture will be wet). Spread onto bottom of an ungreased 13x9-in. baking pan. Refrigerate until set, about 30 minutes. For filling, beat butter, cream of coconut and extract until smooth. Gradually beat in confectioners' sugar and enough milk to reach a spreading consistency. Spread over crust. For topping, microwave chocolate chips and oil until melted; stir until smooth. Cool slightly; spread over filling. If desired, sprinkle with chopped candy bars. Refrigerate. Yield: 3 dozen.

COFFEE MOUSSE
1 tsp. coffee in 1 cup boiling water..
1 pkt. Marshmallows
500ml. cream
Divide marshmallows in coffee water. Leave to partly set.
Whip cream and fold into marshmallow mixture.
* it doesn't matter if marshmallows have not all melted.
i chopped marshmallows with scissors & 1/2 it a bit. made coffee stronger second time i made it

Chicken Leek & Mushroom Pie Cubed Chicken thighs or Breast meat, 700 grams to 800 1 Leek 1 onion clove garlic Good cup chopped Mushrooms 1/2 cup water or stock 1 tin Mushroom soup ( watties or Campbells ) Thyme to taste ;ie 1/2 tsp to 1 tsp Salt pepper to taste Filo Pastry Brown or lightly cook the chicken in pan, add sliced leek. Onions etc Add water cover & simmer till veg is tender, add soup, heat well. thicken if needed, with cornfour & water. Transfer to oven dish & top with scrunched up filo pastry, use 1 sheet at time till the filling is covered. 1 pkt file does at least 3 pies or so. Last time I patted top with cooking oil on hands & sprinkled with poppy seeds Baked in about 180 deg oven till topping is nicely browned & filling pipping hot.

Ambrosia 1 tin drained boysenberries 300ml bottle of cream (beaten, not whipped) 1 pottle of plain natural yoghurt.or any flavoured yoghurt 1 packet of marshmallows cut into bite sized pieces
Mix all ingredients and refrigerate - perfect dessert for those summer evenings.

Lemon Curd
Juice of 3 Large lemons , or 4 med. 180 grms sugar 80 grms Butter 3 eggs Beaten together. Combine Juice, sugar, & butter, in bowl or jug & microwave on high 3 mins whisk in eggs & microwave for 1 min on high. stir well. mic again 1 min. whisk until thick.. cool & store in fridge.

Smoked salmon kedgeree Serves 6
Ingredients
400g hot-smoked salmon 2 Tbsp vegetable oil 1 medium onion, halved, thinly sliced into thin half circles 2 cloves garlic, crushed 2 tsps mild curry powder 1 tsp turmeric ½ tsp ground cumin 300g basmati rice, approx. one and a half cups 750mls fish stock (I use Campbells) ½ cup coconut cream or coconut milk (I use light) 3-4 Tbsp chopped fresh flat leaf parsley zest of one lemon 3 Tbsp lemon juice salt to taste 4 hard boiled eggs, peeled and cut into quarters lengthways lemon wedges to serve extra parsley to garnish

Otago Museum Cafe's pork and fennel sausage rolls serves 4
2 tsp brown mustard seeds 1 tsp cumin seeds 2 onions, finely chopped ½ bulb fennel, diced 200g bacon, finely chopped 1kg pork mince 4 cups fresh breadcrumbs 1 cup chopped parsley zest of 2 oranges 4 eggs, lightly beaten 400g savoury pastry sesame and poppy seeds to sprinkle
Method
Toast spices in a dry frypan for 1-2 minutes over medium heat. Grind them finely and set them aside.
Cook onion, fennel, bacon and pork mince in a little oil, and add toasted spices. Mix this well with crumbs, parsley, orange zest and eggs.
To assemble, shape the mix into two 40cm-long sausages. Roll out the pastry and encase the sausages in it. Cut into four equal pieces, brush the tops with egg wash and sprinkle with the seeds.
Bake at 200degC for 20 minutes or until golden.
Serve with plum sauce and a salad made with mesclun, grated carrot, sliced red onion, grated cheese, cucumber and tomato slices, and pesto dressing.

Place the remaining cookie cake, loosely wrapped in plastic wrap, for up to 3 days at room temperature. What makes this cake so special is its playfulness. Don’t worry about the decorations, they’re supposed to be fun. Add the decorations you want, don’t limit yourself and be creative.

Baked Salmon In Foil -Don't Lose This INGREDIENTS 2 lemons, thinly sliced 1 large salmon fillet (about 3 lb.) Kosher salt Freshly ground black pepper 6 tbsp. butter, melted 2 tbsp. honey 3 cloves garlic, minced 1 tsp. chopped thyme leaves 1 tsp. dried oregano Chopped fresh parsley, for garnish DIRECTIONS Preheat oven to 350°. Line a large rimmed baking sheet with foil and grease with cooking spray. To the center of the foil, lay lemon slices in an even layer. Season both sides of the salmon with salt and pepper and place on top of lemon slices. In a small bowl, whisk together butter, honey, garlic, thyme, and oregano. Pour over salmon then fold up foil around the salmon. Bake until the salmon is cooked through, about 25 minutes. Switch the oven to broil, and broil for 2 minutes, or until the butter mixture has thickened. Garnish with parsley before serving.

Chocolate Skillet Cake with Ice Cream Ingredients: 1 cup flour 1/2 teaspoon baking soda 1 cup sugar dash salt 1/4 cup (1/2 stick) butter 1/4 cup vegetable oil 2 tablespoons cocoa powder 1/2 cup water 1/4 cup buttermilk 1 egg 1/2 teaspoon vanilla Frosting Ingredients: 1/4 cup (1/2 stick) butter 2 tablespoons cocoa 3-4 tablespoons milk (as needed for consistency) 1/2 cup pecans, chopped 2 cups powdered sugar 1/2 teaspoon vanilla ice cream (for serving) caramel sauce (for serving; this one is delicious!) whipped cream (for serving) Directions: Preheat the oven to 350 degrees F. In a large bowl, whisk flour, baking soda, sugar, and salt together and set aside. In a 10-inch cast iron skillet, bring the butter, vegetable oil, cocoa powder, and water to a boil. Remove it from the heat and whisk in the dry ingredients well. Mix in the buttermilk, egg, and vanilla. Bake the skillet cake at 350 degrees F for about 15-20 minutes or until a toothpick comes out with just a few moist crumbs. While the cake starts to cool, make the frosting. STOVETOP STUFFING MEATLOAF Ingredients 1 package Stove Top stuffing (use one of your favorite flavors, I prefer chicken, but herbed savory is good too!) 1 cup of hot water 2 packages of brown gravy mix (one for the inside of the meatloaf and one for the top) 1.5 lbs ground beef 1 cup cold water 2 large eggs, beaten Instructions In a medium bowl, add the stuffing mix and 1 cup of hot water. Let stuffing sit for 5 minutes. Meanwhile, in another medium bowl, mix 1 package of brown gravy with 1 cup of cold water. Add ground beef and egg, mix well (easiest to do with your hands, it’s gross, I know). After the stuffing has rested for 5 minutes, stir the stuffing mixture into the ground beef mixture. Grease a bundt pan with non-stick spray, then press the ground beef mixture into the pan. Bake at 350 degrees for 45-55 minutes or until the inside is no longer pink. Once baked, let rest for about 5 minutes, then invert the pan onto a plate. Serve with mashed potatoes and brown gravy in the center of the meatloaf. Enjoy! That’s it! It’s as easy as pie!
