CURRIED CHICKEN SALAD 1 cooked chicken 1 cup diced Red apple - skin on 1/2 cup diced celery 60g blanched almonds 1 tablespoon lemon juice 1 cup mayonnaise 1/2 cup cream 1 teaspoon curry powder Dice chicken ( about 4 cups) Add celery apple and chopped almonds Combine all other ingredients and add chicken etc Toss well and refidgerate before serving Seedless grapes can be added if you like Seve with side salad of mixed salad greens, tomato, sliced red onion and cucumber. Pretty Yummo - give it a try.

Brown Rice Salad 1 cup Brown Rice 2 spring onion. 4 tbsps Soy sauce 1/2 red pepper 1/2cup peanuts I roast & skin theses. 1/2 cup sultanas.or currants. Cook rice, drain & stir in soy sauce..Leave at least 2 hrs, or if possible overnight. Chop onions, pepper..add to rice along with the peanuts. Dressing 2 tbsps Oil, juice lemon..3 tbsps whitevinger..1 crushed clove garlic, & little grated lemon rind. Shake altogether, & pour over rice & mix well. Or use any french type dressing, I use lots different ones,that are on hand.. adding enough to make a moist salad..

1-2-3 Things Fruit Cake Ingredients: 1 kilo fruit mix 2 cups orange juice 3 cups self raising flour Method: 1. Soak fruit overnight in 2 cups of orange juice. 2. In the morning add 3 cups self raising flour, mix well. 3. Bake at 160 C for 1 1/2 hours. This cake is so easy and very yummy. ENJOY! I have also been told it is really nice as a dessert with warm custard

5-minute Fudge 2tbsps.butter(marg) 2/3 c.evaporated milk 1 2/3c.sugar 1/2tsp.salt 2c.miniature marshmellows 1 1/2c.(6oz.pkg.)semi-sweet choc.pieces 1tsp.vanilla 1/2c.chopped nuts(optional) Combine butter,milk,suar &salt in a sauce pan over medium heat, stirring occasionally. Bring to a full boil. Cook 4 to 5 minutes, stirring constantly.Remove from heat. Stir in marshmellows, chocolate pieces,vanilla & nuts. Stir vigorously for 1 minute(until marshmellows melt& blend.) Pour into a greased 8-inch square pan. Cool. Cut in squares. Enjoy!

Easy Chicken Pot Pie (Serves 4) Chicken is such a simple and good meat to serve any time of the year. We do not usually use prepared soups in our recipes, but the cream of chicken soup (in dry form) does add a special flavor to this dish. 1 package frozen puff pastry - use two small sheets 2 Tbsp all-purpose flour ¼ tsp salt ¼ tsp freshly ground black pepper 1-2 Tbsp olive oil 1 Tbsp freshly sage, chopped 1 Tbsp freshly tarragon, chopped 1 Tbsp freshly oregano, chopped 10 oz (300 g) chicken (fillet or breast) 1 Cup (2 dl) chicken broth 2 Cups (4 dl) fresh or frozen vegetables (carrots, broccoli, Cauliflower, peas, corn, etc.) 1 spring onion, sliced 1-2 cloves garlic, minced 1 Cup (2 dl) fresh mushrooms, sliced Small package of cream of chicken soup or 2 tablespoons flour Directions: Preheat oven to 200° C (400° F) Roll out the pie dough or thawed puff pastry and cut 4 four inch circles (10 cm) or cut out smaller ones if you wish. Place the dough circles on baking paper on a cookie tray and brush the tops of the dough lightly with milk. Pierce top of dough with a fork and bake at 425° F (220° C) for 8 minutes or until golden brown. Remove from oven and set aside. Mix the flour, salt and black pepper. Cut the chicken fillets or breast into bite sized pieces and dredge in the flour mixture. In a heavy skillet or wok, heat 1-2 Tbsp olive oil and lightly brown the chicken. Add the garlic and spring onion, chicken stock, vegetables, and mushrooms and bring to a boil. Reduce heat and continue to simmer until vegetables are done. If you have a small package of cream of chicken soup, remove the wok from the heat and sprinkle the soup over the chicken and vegetables, stirring while you add the soup powder. If you do not have soup powder, stir 2 tablespoons of flour with a little milk or water and add it to the chicken and vegetables mixture, stirring while you add the flour mixture. Return the wok to the heat and bring mixture to a boil, stirring constantly until sauce has thickened. Add the sage, tarragon, and oregano and spring onions and stir through. Spoon chicken mixture into 4 ramekins, top each with one pie crust and serve. Or make in the one dish.

Here is a simple recipe using clear heather honey and other flavours to create a tasty roast chicken dish. While heather honey is the best, other clear honey will suffice.
Ingredients: One whole chicken, minus giblets 3 fluid ounces (90ml or under half a cup) light cooking oil 4 fluid ounces (125g or half cup) clear heather honey Salt and pepper (freshly ground black pepper if you have it) 3 ounces (100g) French mustard Half teaspoon curry powder (yes, curry powder) One clove chopped garlic
Method: Place the chicken in an oven-proof casserole dish. Mix all the other ingredients together and pour over the chicken. Cover the dish and cook in a pre-heated oven at 375F/190C/Gas Mark 4 for an hour. Baste the chicken thoroughly with the juices and sauce and return to the oven for another half hour uncovered. The chicken will brown as a result. Serve with boiled or creamed/mashed potatoes and fresh vegetables.
see Caronz's comments in my recipe thread. If there are any left overs, you could use then in your curried chicken salad - add some sliced mixed colours capsicum to it for a bit more colour and crunch.

yum that sounds good the fruit cake spirit, thx will do that No left overs peter..I used boneless chicken pieces, was much nicer than the whole chicken

Fried Rice 1 c Uncooked rice 5 T Butter 1 c Chopped onion 1 c Chopped carrots 2/3 c Chopped spring onions 3 T Sesame seeds 5 Eggs 5 T Soy sauce Salt Pepper Cook rice according to package directions. In a large skillet melt butter. Add onions, carrots and spring onions. Saute until carrots are translucent. Set aside. Heat oven to 350 degrees. Place sesame seeds in a shallow pan. Bake until golden brown (10 to 15 minutes), shaking pan occasionally for even color. Lightly grease another skillet. Beat eggs. Pour into hot skillet. Cook as you would scrambled eggs. Combine rice, vegetables, sesame seeds and eggs. Add soy sauce. Stir. Salt and pepper to taste.

Peanut Butter Cookies Makes 24
Ingredients:
8 oz. ( 225g ) self-raising flour
pinch of salt
3 oz. ( 75g ) margarine
2 oz. ( 50g ) peanut butter
2 level teaspoons golden syrup
Cooking Instructions:
Pre-heat oven to 375F, Gas Mark 5, 190C
Blend together the flour and salt in a mixing bowl, then rub in margarine and peanut butter
Melt the syrup in a small saucepan, then pour in flour and mix well
Roll the mixture into small balls about the size of a walnut] [Place on greased baking sheets and flatten slightly
Bake in center of oven for 10-15 minutes, until golden , then cool on a wire rack

This recipe has everything I always have in my pantry aside from soy sauce

Maybe's.... But L&P sauce is rather hot so maybe lot less soy is best though can be bit salty.

IMPOSSIBLE QUICHE 4 Breakie/Brunch/Lunch/Dinner with toast or Salad or both 4 eggs 2 cups milk 3/4 - 1 cup bacon/ham (chop roughly) 3/4 cup pastry mix 1 cup grated cheese 1 small onion Chopped chives/parsely/spinach to colour mix ALL ingredients together well pour into greased quiche dish - mine is 8" x 1" round glass cook in 180 degree oven 45-50 mins (serves 4) IT'S IMPOSSIBLE TO RUIN

VEGETABLE QUICHE with MEAT SHELL (Recipe is best made just before serving) 1 TBLS oil 500g minced beef 1 onion, chopped 1 clove garlic, crushed 1 egg lightly beaten 1/4 cup grated parmesan 1 TBLS plain flour FILLING 30 g butter 1 medium leek, sliced 2 (about 240g)carrots,grated 1 red pepper, finely chopped 2(about 200g ) zucchini,grated 4 eggs,lightly beaten 1/3 cup grated parmesan cheese 2 TBLS shredded fresh basil 2 tsp seeded mustard Heat oil in pan, add mince, onion and garlic, cook, stirring, until mince is browned, cool. Stir egg,cheese and flour into mince mixture, mix well.Press mixture over base and side of 23 cm pie plate,pour in filling, bake, uncovered, in moderate oven for 50 minutes, or until filling is set. FILLING Heat butter in pan, add leek,cook,stirring, until soft.Add remaining vegetables, stir over heat until veggies are tender, transfer mixture to bowl, cool. Stir eggs,cheese,basil and mustard into vegetables,mix well. Serves 4-6 Not suitable to freeze or microwave
