Date n Rhubarb Pie This recipe is from my dear ole Mum, whose own Mother made this when she was a child. Measurements are vague, but a good cook can work it out......lol Make a quantity if short-crust pastry. Stew some rhubarb ,with a little sugar,til almost cooked. Strain to remove the liquid, which you reserve. Leave to cool. Line a pie plate with pastry, and add pitted dates to the base.I personally would chop them in half. Add the cooled rhubarb, and top with pastry, and decorate edges, and pierce the centre, to let the steam escape. Brush pastry with a little beaten egg, and dust with sugar. Cook in moderate oven for 30 minutes, or until pastry is golden. Serve with cream/icecream, and make a sauce with left-over liquid and drizzle over. An oldie but a goodie.........

PORK WITH PAN FRIED APPLES.Ingred: Olive Oil SPRAY 2 (about 300g each) pork fillets 2 large granny smith apples, peeled cored and cut into wedges 1 1/2 tablespoons quince paste 1 tablespoon wholegrain mustard 80ml (1/3 cup) chicken stock 150g Baby Spinach Leaves Steamed green beans, to serve 1. Preheat oven to 180 deg c Spray a frying pan with olive oil spray. Place over high heat. Add Pork and cook for 1 - 2 mins each side or until brown. Transfer to a baking tray bake 5 mins. 2. Meanwhile add the apple to the pan and cook 1 - 2 mins each side or until golden. Transfer to the oven tray with the pork Bake 5 - 7 mins for medium. Set aside for 2 - 3 mins to allow meat to rest. Thickly slice pork across the grain. 3 Meanwhile place the quince paste mustard and stock in the frying pan. Bring to boil over medium heat. Simmer for 1 -2 mins or until slightly reduced. 4 Place spinach in a bowl cover with boiling water. Set aside for 2 mins or until wilted. Drain 5 Divide the spinach among serving plates. Top with sliced pork and apple. Drizzle over the sauce and serve with green beans.

Diet Chips - supposedly serves 6 6 medium (1.2kg) potatoes 1 egg white 1 teaspoon lemon pepper * Cut potatoes into thick chips. Boil steam or microwave chips until only just tender, drain, pat dry. Combine egg white and lemon pepper in bowl; add chips, stir until well coated. Place chips on baking paper-covered oven tray, bake in very hot oven (about 240C) or until browned. * doesn't have to be lemon pepper - you can use anything you like - dukkah is nice or sumac or dried mixed herbs - and I must admit I also use a little salt too.

PUMPKIN AND RED LENTIL STEW 2 tblsp Polyunsaturated oil 1 onion chopped 1 clove garlic, crushed 1 tsp ground cumin 1 tsp ground coriander 1 tsp ground turmeric 2 carrots peeled and sliced 100g red lentils 440 g canned peeled tomatoes, undrained 375 ml vegetable stock 1-2 tsp chilli sauce, according to taste 500 g pumpkin peeled and cut into 2 cm cubes freshly ground pepper unflavoured yoghurt Heat oil in large saucepan and cook onion,garlic,cumin, coriander,turmeric and carrots for 5 minutes, or until onion softens. Stir in lentils, tomatoes and stock and bring to boil. Reduce heat, cover and simmer for 15 minutes. Add chilli sauce and pumpkin, and cook 15-20 minutes longer or until pumpkin is tender.Season to taste with pepper. Ladle stew into bowls and top with a spoonful of yoghurt. Serves 4....

Mince Pie Servings: 6
Ingredients: 4 potatoes 500 grms lean ground beef 1 onion, chopped 1 450 grm condensed tomato soup 1 can green beans, drained..or frozen beans or mixed veg 1 cup shredded Cheddar cheese
Directions: 1. Preheat oven to 350 degrees F (175 degrees C). 2. Peel and quarter potatoes, and place into pot boiling water; cook until tender, about 15 minutes. Drain and mash. Set aside. 3. In a large pot or pan over medium-high heat, cook ground beef and onion until beef is brown. Drain. Stir in tomato soup and green beans. Pour into a 9x13 baking dish. Mound mashed potatoes in a ring around the meat mixture (do not cover meat). Sprinkle potatoes with shredded cheese. 4. Bake in preheated oven 30 minutes, until potatoes are golden.

Yumm luv this I (copied it) Sticky date puddingIngredients (serves 8) 250g pitted dates, chopped 1 teaspoon bicarbonate of soda 1 1/2 cups boiling water 125g butter, softened 1 cup brown sugar 1 teaspoon vanilla extract 2 eggs 1 3/4 cups Self-Raising Flour, sifted Caramel sauce 1 cup brown sugar 300ml thickened cream 1/2 teaspoon vanilla extract 60g butter Method Preheat oven to 180°C. Grease and line the base of a 7cm deep, 22cm (base) cake pan. Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 minutes. Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold through date mixture and flour until well combined. Spoon mixture into prepared cake pan. Bake for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Turn onto a plate.

Chocolate Cake (No Eggs and No Butter)
This cake can be mixed in the container it is going to be baked in (e.g deep round cake tin). There is no need to grease the tin.
3 cups flour 2 cups sugar 1 tsp salt 2 tsp baking soda 2/3 cup cocoa (less can be used) 1 tsp vanilla essence 2 Tbsp vinegar 2/3 cup cooking oil 2 cups water
1. Mix dry ingredients thoroughly. 2. Add liquids and mix well. 3. Bake at 180C for 1 1/4 hours.
The cake can be iced or left plain. It also makes a good dessert served with cream or custard.

Tiramisu
Sweet found the one I use. I don't know how traditional it is. All I know is it's yum.
5 eggs separated 75g caster sugar 500g mascarpone cheese 1-3 tbl rum (to taste really) 250 strong black coffee 250g sponge fingers 75g coca powder sifted 60g dark chocolate 115g rasberries or strawberries (optional)
1st part Place egg yolks and sugar in a large bowl and beat until very thick and pale. Add mascarpone cheese and rum to taste and mix gently. Beat egg whites to stiff peaks and fold into mascarpone mixture.
2nd Brush fingers with coffee and use to line the base of a serving bowl. Add 1/4 of the cheese mixture and sprinkle with 1/4 cocoa. Repeat using remaining cheese mixture and cocoa to make 4 layers. (layers optional too) Decorate with chocolate and berries.
Cover and refrigerate for 24hrs

Xmas Yummy Rum Balls
9 weetbix (crushed) 1 tin Condensed Milk half cup coconut 1 cup Raisins 1/4 cup rum or more & really nice if you soak the raisins in the rum...lol 2 tbsp cocoa Mix all together and refrigerate overnight. Roll into balls and then in extra coconut Just easy peasie...lol Lovely Xmas treats...lol

Marshmallow Treats
Such an easy recipe done in minutes.
1 packet wine bisuits - crushed 50g butter 1 tsp vanilla essence 1/2 tin condensed milk 1/2 cup brown sugar 1 tablespoon cocoa 1 bag Marshmallows
Combine butter, vanilla, condensed milk, brown sugar and cocoa in a saucepan and bring to a simmer for 3 minutes. Add biscuits and mix well.
Allow mixture to cool then roll into balls, flatten and encase marshmallow inside.

A Sherry & Berry Trifle
Think this is what I seen made on telly one day Looked Yummo
Ingredients 1 packet trifle sponges, broken into 1cm/2in pieces ½ packet of amaretti biscuits or 150g/5oz macaroons or ratafias 150ml/5fl oz sweet sherry 1 tbsp cognac 4 tbsp blackberry or raspberry jam 450g/1 lb fresh blackberries 450g/1 lb fresh raspberries 85g/3oz toasted flaked almonds 600ml/1 pint ready-made custard For the syllabub topping 125ml/4fl oz sherry 2 tbsp brandy 1 lemon, juice only 55g/2oz caster sugar 425ml/15fl oz double cream freshly grated nutmeg To garnish 2 oranges, grated zest only 85g/3oz flaked almonds
Method 1. Lay the sponge pieces and biscuits in the base of a deep glass dish. Spoon over the sherry and cognac and leave to soak in for a few minutes. 2. Warm the jam until it is runny then pour over the soaked sponge and biscuits. Sprinkle the fruit and flaked almonds on top then pour over the custard. 3. To make the syllabub topping, place the sherry, brandy and lemon juice into a bowl and stir in the sugar until it dissolves. 4. Pour in the cream with a pinch of nutmeg. Whisk together using a wire balloon whisk until it holds its shape. Don't over-whisk, or whisk too vigorously, as the cream may split. 5. Spoon the syllabub over the trifle and chill, preferably overnight. 6. Just before serving, scatter with the grated orange rind and/or flaked toasted almonds.

Crispy Apricot Balls 2/3 Crushed plain biscuit crumbs 1 cup Rice bubbles 1/3 Desiccated coconut 250g White chocolate 1 tbsp oil 3tbsp Apricot Jam 2/3 cup coloured sprinkles Put biscuit crumbs, rice bubbles & coconut in bowl, Mix gently….melt chocolate in bowl over hot water….take off heat add oil & stir until smooth….put jam in microwave & heat gently, do not allow to boil….make a well in the centre of crumb mixture….pour in melted chocolate and jam, mix gently….make into balls by rolling 1 tbsp of mixture….roll balls in sprinkles, leave to set at room temperature…YUM YUM!

Pineapple salsa for corned beef or ham.. 1 small tin crushed pineapple 1 Tbsp dried currants or dried Cranberries..I used the later 1Tbsp Balsamtic Vinegar 1 tps whole grain mustard heat all for few mins. Then thicken with little water & 1..to 2 tsps cornflour. Cool little or chill & serve with hot or cold meats..

Bean and Corn Salad Ingredients 1 cup black or red beans, canned or dry, soaked and cooked 1 cup frozen sweet corn chopped onion chopped bell peppers chopped celery ground cumin rice vinegar Directions:
Mix the veggies, add cumin and rice vinegar to taste. or good vinegar dressing.

Mix in bowl 1tbsp oil. 1tbsp vinegar. 1 to 1& 1/2 tsp curry powder.1 tsp soya sauce (opt) Cook 1 & 1/2 cups rice in boiling water till just cooked, drain & add to bowl while still hot, mix well to coat rice. Add about 1/2 cup chopped celery, cup cooked peas,& if wished diced cooked carrot, & corn.1/2 cup chopped onion, red or spring etc.. last time i made this, I used a french type dressing, Though the recipe we used yrs ago said cup of mayo . Add a good shake of poppy seeds if wished.
