Quick choc mousse
100g dark chocolate, chopped 300ml thickened cream, chilled 1/2 cup (165g) Coles Smooth Hazelnut Spread Crumbled Cadbury Flake chocolate bar, to serve Select all ingredients
Step 1 Place dark chocolate in a heatproof bowl over a saucepan of simmering water (make sure bowl doesn’t touch the water). Stir with a metal spoon for 3-4 mins or until it just melts. Set aside for 5 mins to cool slightly. Step 2 Use an electric mixer to whisk the cream in a large bowl until soft peaks form. Add the hazelnut spread and whisk until the mixture is just combined. Add the melted chocolate. Use a large metal spoon to gently marble. Step 3 Spoon the mousse evenly among serving glasses. Sprinkle with Flake bar and serve immediately.

Pineapple Ruffles
Ingredients
250 g biscuits crushed 225 g (crushed) canned pineapple drained 395 g condensed milk 1/2 cup shredded coconut 1 cup coconut
Method
Mix all ingredients together. Roll into bite-size balls and roll in coconut. Refrigerate for approximately 1 hour.

Choc-mint 'tiramisu'
Ingredients
500g chocolate sponge cake 1/4 cup chocolate liqueur (optional) 6 x 40g Aero Mint bars 1 tbsp gelatine 250g cream cheese 1/3 cup caster sugar 1/3 cup milk 600ml thickened cream 1/4 tsp peppermint essence Green food colouring 35g Peppermint Crisp, crushed 20g dark chocolate, shaved
Method
Slice up chocolate sponge cake and place in a single layer in the base of a large ceramic or glass dish. Drizzle over chocolate liqueur, if using. Arrange Aero Mint bars in a single layer on top. Place 1/4 cup water in a small bowl and sprinkle over gelatine. Leave to bloom for 5 minutes, then place the bowl in a small saucepan filled halfway up the sides of the bowl with boiling water. Whisk until gelatine has dissolved and mixture is smooth. In a stand mixer or using hand-held beaters, beat cream cheese, sugar and milk until smooth. Add gelatine mixture and beat to combine. Add 300ml cream and beat until smooth and thick, then beat in peppermint essence and a few drops of food colouring until mixture reaches a pale minty green colour. Pour over Aero bars in dish and smooth the top. Refrigerate for at least 1 hour until set. Beat remaining 300ml cream until thick. Spread in an even layer over the mint cream cheese layer. Refrigerate until ready to serve. Just prior to serving, sprinkle over crushed Peppermint Crisp and shaved dark chocolate.

10-Minute Easy Tiramisu
1 cup heavy cream 8 oz mascarpone cheese 1/4 cup granulated sugar 1/4 cup brewed espresso or strong coffee, cooled 2 tbsp rum or coffee liqueur (optional) 16 ladyfingers cocoa powder, for dusting
Instructions:
In a large mixing bowl, whisk together the heavy cream and granulated sugar until stiff peaks form. Add the mascarpone cheese to the bowl and whisk until well combined and smooth. In a small bowl, mix together the cooled espresso or coffee and rum or coffee liqueur (if using). Quickly dip each ladyfinger in the coffee mixture and place in a single layer in the bottom of an 8×8 inch dish. Spread half of the mascarpone mixture on top of the ladyfingers. Repeat with another layer of coffee-dipped ladyfingers and the remaining mascarpone mixture. Dust the top with cocoa powder. Chill for at least 2 hours before serving. Enjoy your delicious and easy tiramisu!

How to make chocolate tiramisu! ingredients : 250 g of mascarpone 300 g sweetened liquid cream Spoon biscuits Freshly brewed and chilled coffee Bitter cocoa powder Chocolate chips Preparation : Prepare a few cups of coffee and let it cool. In a large bowl, whip the mascarpone and the sweetened liquid cream using an electric mixer until the mixture becomes stiff. Dip the spoon cookies in the coffee and arrange them in a layer in a baking dish. Spoon half of the mascarpone and cream mixture over the cookies and sprinkle with chocolate chips. Arrange a second layer of coffee-dipped cookies on top, then spread the rest of the mascarpone cream. Sprinkle bitter cocoa powder on the surface of the tiramisu. Place the tiramisu dish without eggs in the refrigerator for at least 2 to 3 hours so that the preparation solidifies. Once cooled, serve the tiramisu without eggs and enjoy!

Cowboy Cookies 1 cup butter 1 cup of sugar 1 cup conditioned brown sugar Mix the cream and add 2 eggs.
Instructions :

GREEK KUMARA & LAMB SAUSAGE ROLLSMakes 8
500g lamb mince1 cup grated kumara1 small onion, chopped100g feta, crumbled½ cup roughly chopped parsley½ tsp cumin¼ tsp dried oregano½ tsp paprika1 egg500g puff pastryEgg wash — 1 egg yolk mixed with 1 Tbsp waterChutney, to serve
1. Preheat an oven to 190C. Line a baking tray with paper.
2. Place the lamb mince, kumara, onion, feta, parsley, cumin, oregano, paprika and egg in a large bowl, mixing to combine well.
3. Roll the pastry out flat on a lightly floured bench into a 40cm rectangle approx. 5mm thick. Place the mince on to the long edge in an even log. Dampen the edges of the pastry with water. Roll the pastry, finishing with the cut side down. Cut into 8 pieces. Place them on the baking paper. Brush with a little egg wash or milk and sprinkle with a little extra oregano.
4. Place into the oven for 25 minutes until golden. Remove and cool on a wire rack.
5. Serve with a dollop of chutney.

Ingredients: – 1 kg mixed fruit (I also include a pack of glacé cherries) – 2 cups chocolate milk – 1/2 to 3/4 cup Baileys (according to personal preference) – 2 cups self-raising flour Directions: 1. Soak the fruits in milk and Baileys for 24 hours. 2. Fold in the flour. 3. Set the slow cooker to low heat and line it with 2-3 layers of baking paper both around it and underneath. (I also double a long strip and place it first to make it easier to remove when cooked). 4. Pour the batter into the slow cooker and even it out. 5. Cook on low for 7-8 hours with a tea towel under the lid. It’s that easy!
